There are single weight variants and multiple weight variants that allow fast switching. Where is the single weight or the multiple weights documented for a specific aircraft? For multiple weights, how do you switch? Does Eurocontrol recognize the lesser weight variants for lower fees?

Eurocontrol charges vary with the aircraft weight (MTOW). Individual MTOW for aircraft are publicly available on manufacturers and certification agencies sites.
Eurocontrol charging
Eurocontrol is both the cross-border air navigation service provider (ANSP) for Maastricht control center and a central route charges office (CRCO) collecting en-route charges, for each flight crossing the member territories, regardless of the local ANSP providing the service, on behalf of its members. Members are EU States and a few non-EU States. Eurocontrol charges are based on:
A charging unit $u$ different for each State, e.g. 95€ for the Netherlands but 47€ for Norway. This pricing unit depends on the bilateral agreement with the State.
A number of units calculated by dividing the length of the great circle in km between entry and exit points by 100 ($n = \frac {\rm km} {100}$).
A weight factor. It is the the square root of the number obtained when dividing the maximum weight at takeoff (MTOW) in metric tonnes by 50 ($w = \sqrt \frac {\rm tonnes} {50}$).
Charges are $u \frac {\rm km} {100} \sqrt \frac {\rm tonnes} {50}$.

The MTOW of aircraft depends on the aircraft type, the variant, the engines used, and other elements. Approximate MTOW are available online, e.g. on Wikipedia.
